Actually most of those settings are in the client actually and not the server. We do have a different LG so all could be subject to that. My way of doing it is use a tool to add .srt to the mkv itself and use the embedded player for actual direct play. Whatever else I tried messes up the quality either by transcoding or something else. The are a lot of threads requesting Plex to fix this. And I dont fill like paying for Xplay even though it maybe a good job.

FYI just make a quick compare between the quality. Don't know why but in my case plex has far worse quality. Used plex a lot through out the years but at this case LG player has far superior quality.
